As promised to the wine lover’s, here is part one of “my favorite new wines” on the new Wildfire wine list!
If you are looking for a refreshing starter wine by the glass, the Ruffino Prosecco may be just what you have in mind. This Prosecco has a fragrant and intensely fruity bouquet. It shows clean notes of apples, pears and citrus, accompanied by slight hints of elderflower. This sparkling wine would pair very well with all of our appetizers, chicken and fish dishes. Two appetizers that come to mind would be the shrimp & crab bisque and the chicken sausage pizza with roasted peppers, caramelized onions and jalapeño jack cheese - so good!
The long awaited Colby Red is finally available by the glass in all of the Wildfire
locations and a portion of the proceeds for this wine goes to the American Heart Association for cardiac research. This wine is a blend of Cabernet Sauvignon, Zinfandel, Syrah, Petite Sirah & Merlot. This Wildfire staff favorite displays flavors of blackberries, boysenberries and plum, which are enhanced by lovely spicy notes along with a slight toasty, vanilla character from oak aging. I recommend trying this wine with the tenderloin steak sandwich or the braised short ribs- my stomach is growling!
Another new staff favorite by the glass is the Spellbound Petite Sirah! This is the first Petite Sirah that Wildfire has featured by the glass in about 12 years- long over due! This wine has intense dark color, is rich and has black fruits, vanilla bean and roasted coffee aromatics. This lush, yet easy drinking wine provides intense berry character with a superb texture. You can’t go wrong with drinking this wine with any of our steaks but, if I had to choose my personal picks, it would either be the signature Horseradish Crusted Filet Mignon or the Char Crusted® Rib Eye Steak- now I am officially hungry!
A new “bottle only” selection that I encourage you to try is William Hill Bench
Blend Collection Cabernet Sauvignon. This wine showcases elegant red and black fruit aromas along with flavors of ripe cherry, brown spice, and sweet vanilla. Food pairings that come to mind for this wine are the Lamb Porterhouse Chops or the High Plains Bison Filet- if you are not hungry by now, you must be a vegetarian or a beer drinker- lol!
