Relaxing During the Holidays with Wine

With Thanksgiving behind us and the holiday shopping season in full bloom, take a break from the madness and check out some of our newer wines on our wine list!  

As far as Chardonnays go, in general I do not gravitate towards this grape varietal when choosing a wine on a wine list. However, the Cuvaison Chardonnay is a whole other story! This is by far my favorite Chardonnay and perhaps white wine on the Wildfire wine list. This wine has aromas of lime zest, nutmeg and quince with hints of lemon, clove and vanilla. Along with this wine being incredibly balanced and creamy, flavors of nectarine, acacia and tangerine round out this lush, silky Chardonnay. I would personally pair this wine with the Mushroom Crusted Pork Chops or our Country Fried “Boneless” Chicken - you won’t be disappointed!

Since we have had such great success with pouring the Ferrari-Carano Alexander Valley Cabernet Sauvignon by the glass in all of the Wildfire locations, we decided that we should add another Ferrari-Carano Winery favorite to our list with the Siena! Ferrari-Carano Siena, made up of 76% Sangiovese, 16% Merlot & 8% Merlot, has delicious aromas of cherry pie, raspberry jam and spice with lingering flavors of ripe wild berries, pomegranate, vanilla, caramel, and sweet oak. Elevated tones of dried cherries, cranberries come out along with deeper, darker nuances of blueberry preserves, cherry cola and cinnamon round out this wine’s profile. Besides being available on the regular wine list, you can enjoy a bottle of Siena for half the price every Monday from our limited selection of 50% off Monday wine list. Try this tasty treat with either our Braised Short Ribs or the Mini Bison Burger Trio- truly decadent!

Another wine available on our 50% off Monday wine list promotion is the Oberon Napa Valley Cabernet Sauvignon. This classic Napa Valley Cabernet is a favorite amongst many Chicago steak houses and displays deep, rich color and concentrated black fruit character. Lush, dark berry and cassis flavors are complemented by a supple texture on the palate - this wine practically screams “drink me with a porterhouse steak”!

The Pride Mountain Vineyards Merlot, available by the bottle only, is definitely my personal pick and a wait staff favorite that will impress your guests and especially those “anything but Merlot” skeptics! This beautifully handcrafted Merlot has a knockout nose of sweet dark cherry, violets, poppy seed cake and the subtle hint of mahogany chest. Flavors of gorgeous intense cherry and plum along with a silky, round texture is what this wine exudes and much more! Enjoy this wine with our Roasted Prime Rib of Beef or our signature Horseradish Crusted Filet Mignon - let the holiday binge eating & drinking continue!
